Adam's marching orders had changed. He won't be going to Chicago, but he will be going to Los Angeles. He flies out early tomorrow morning. He will be home next Tuesday.
I came home tonight to find dinner prepared: Baked salmon steaks with yellow rice, curry leaves, and gotu kola leaves. Adam had bought a whole eight-pound salmon at a discount and had the grocer slice it up for him. When he opened the door to the large freezer, my jaw fell open: At least half a dozen salmon steaks, neatly packed in Ziploc bags. My husband was a little bemused by my awe, so I reminded him that I am not used to seeing so much fresh Alaskan salmon in my home freezer. Adam reminded me that he is skilled at bargain shopping, hunting for discounts, and picking good sales. And with the way he cooks and prepares meals, we tend to eat richly for very little money.
Dinner was fantastic. And I have decided that baked salmon with Indian curry over yellow rice is one of my very favorite meals. We now have enough salmon for several months, between the two of us.
I am very slowly learning to cook flavorful, healthful meals beyond simplicity. I used to be scared of the oven when I was a child.
I did eat my entire steak, plus my share of rice. I felt incredibly full, but it was delicious and silky and beautiful.
I am still fighting the mindtwist that tried to kill me all those years ago. Sometimes it is like staring down a long dark hall while a strange creature sits in your head and looks out through your eyes; it knows exactly what is in that hall and wants to lead you to places you don't really want to go, but by the time you have decided to break free the creature has taken your thoughts and made them its own.
